The use of dehydrated mushrooms is associated with a number of advantages. The only requirement is that their drying has been done correctly.

• Wild mushrooms, in particular, are available all year round, and not only during the very short period in which they are fruiting.

Don’t forget: 500g of dried boletus edulis equals 5kg of fresh.
Cooking instructions:
Before cooking, dehydrated mushrooms must be hydrated in lukewarm salted water or wine for 15-20
minutes.
Then they can be cooked just like the fresh, while the remaining water or wine can be used as stock base.
