Ceylon Cinnamon is derived from the inner bark of the tropical plant Cinnamomum zeylanicum. How do we distinguish genuine Ceylon cinnamon from cassia (simple)? The cassia is darker, reddish brown while genuine Ceylan cinnamon has a bright color, the cassia rosettes are thick and hard while Ceylon cinnamon is thin and brittle and has a sweet, slimmer, stronger flavor.
