After harvesting, the fruit are opened and the seeds are removed. Then they are dried, cleaned and baked slightly crushed and cleaned again. The crushed granules are basified by addition of potassium then baked, cooled and ground. The result is the cocoa mass. The cocoa mass is pressed until the fat content is at the desired level. Apart from the separated cocoa butter remains a solid which is ground and gives us wonderful cocoa powder. Served as drink plain or with hot or cold milk. It is ideal forn pastry.
