Summer green beans with mint and feta cheese

Ingredients

500 gr. round green beans (fresh or frozen) )

½ a red onion

A clove of garlic

1 bunch fresh mint

250 gr feta cheese

Organic Extra Virgin Olive Oil

Salt and pepper

Execution

Blanch the beans for 4-5 minutes in a pot with salted water. Drain and place them in a bowl with ice-cold water
to stop the cooking and maintain the bright green color. Finely chop the onion and the mint and peel the garlic.
In a nonstick frying pan put 2-3 tablespoons olive oil. Grate the pepper and just leave it for a little bit to warm up
into the olive oil over medium heat until it starts to release its aromas. Add the chopped onion the garlic clove and
some of the finely chopped mint while lowering the heat (we do not want to burn the onion and garlic). Sauté for a
while till the onions get a golden color and sweeten. Remove the garlic clove. Drain beans well and pour them
into the pan while turning the heat up. Mix well. Once the beans warm again turn down the heat and add the
crumbled feta. When the feta cheese begins to melt remove the pan from the heat. Add the rest of the chopped
mint to the beans. Mix well. Sprinkle with plenty G.E.T. Organic Extra Virgin Olive Oil and serve.
